Ingredients:
1 can full fat coconut milk
2 tsp vanilla
1-2 tsp honey
Instructions:
Whisk everything together in a large bowl.
Pour everything into a large baking dish and place the dish in the freezer for 45 minutes.
Remove from the freezer and stir vigorously to break up any frozen sections. Return to the freezer. Continue to check the mixture every 30 minutes.
Keep checking and stirring vigorously until the ice cream is frozen. It should take a total of 1.5 to 3 hours to be ready.
Transfer to a covered storage container until ready to serve.
It comes out perfectly rich and creamy, with a hint of coconut.
